Beet Juice Version of Borscht

...deliciously refreshing, healthful drink

This recipe is a beet juice version of borscht, made with healthy yogurt or kefir. If the greens come with beets and look fresh, you can use them along with beet roots although greens might add some bitterness to the juice.

You can also use the same recipe and serve it as soups if you choose to pulp your vegetables in a blender rather than juice them. In any case, it is quite delicious and packed with nutrients. Very easy to make. Enjoy!


Beet Juice Borscht

Beet "borscht" juice

What you need:
  • 2 large beets (with or without greens)
  • 2 oranges
  • 1 cucumber
  • 3 scallions
  • 5 mint leaves (optional)
  • 1 cup plain nonfat yogurt, or kefir
  • 2 cucumber spears for garnish (optional)

What to do:

  1. Scrub beets well, discard tops if wilted but rinse and use if not, and cut into 2-inch cubes. Peel and quarter oranges. Rinse cucumber and cut into 2-inch lengths. Rinse scallions
  2. Push beets, oranges, cucumber, and scallions through the juicer, and process until juiced. Pour juice into a blender and add yogurt. Blend for 30 seconds, and pour juice into two glasses
  3. Serve immediately, garnished with cucumber spears if desired
  4. To pulp this recipe in a blender or food processor fitted with a steel blade, remove seeds from oranges, trim scallions, and cut all ingredients into pieces no larger than 1 inch. Add yogurt along with other ingredients.
