Fried Beetroot for Breakfast

Quick and simple fried beetroot dish that you can assemble in 20 minutes is perfect for a light vegetarian breakfast. Make it with fresh beets, or use up leftover cooked beets, boiled or baked. No special ingredients to buy for this recipe - use what's in your pantry.

Fried Beetroot Recipe

What you'll need:

  • 1 medium-sized raw beet
  • 4 tablespoons of butter for frying
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons flour
  • 2 tablespoons vinegar
  • 1 tablespoon water

What to do:

  1. Peel the beetroot, and cut into slices about a quarter of an inch thick.
  2. Dissolve the butter in a frying pan, add beet slices and fry for 20 minutes, sprinkling each slice on both sides with the pepper and salt. When done, arrange the slices on a hot dish.
  3. Reset the frying pan on the fire, stir in the flour, thoroughly mixing it with the butter, and fry for a couple of minutes, stirring all the time. Add water and vinegar and stir until quite smooth.
  4. Pour the sauce over the beetroot slices and serve quickly.
